Paul Carmichael

Born in Barbados, trained in America, schooled in kitchens such as wd~50 and Momofuku’s Má Pêche, then settled in Sydney, Paul Carmichael has, during his time overseeing Momofuku Seiobo, made himself into the world’s foremost proponent of modern Caribbean cooking. The recently shuttered restaurant – part of David Chang’s culinary empire – was Carmichael’s stage to shape an ambitious tasting menu driven by his connection to his homeland and the surrounding region. Dishes such as live marron tossed with spiced soffritto or hand-pounded mofongo spoke to Caribbean home cooking tradition but also drew on an Australian pantry and fine-dining sensibilities to create a singular, essential dining experience which resulted in a string of high-profile awards for the chef, restaurant and team, including Gourmet Traveller’s 2016 Restaurant of the Year award.

The Master of Taste, chef Paul Carmichael takes to the Winning Appliances kitchen for a sensory overload as part of our Masters of Senses series. Bold and exuberant flavours of Caribbean cuisine took centre stage at this demonstration which was a true showcase of Carmichaels' culinary prowess.
